The Italian Table
The Italian Table is Theo Randall's love letter to regional Italian cooking, a hundred recipes arranged like a proper Italian meal that moves from antipasti through to dolci. Because the book is rooted in the places these dishes come from, lots of the photography was made across Italy rather than in a studio, which let the food sit in its true context of light, landscape and table.
Shooting on location like this is where my reportage instincts come alive, following the food from market to plate and letting the country supply half the atmosphere for free. Theo's food never has too many ingredients but always maximum flavour.
Photographing the front cover was amusing: to get the horizon in the correct place we had to raise the table ten foot in the air. The table was a door, and it was balanced on two ladders!
